Today, I am a walking band-aid (tm) advertisement. I change it about 3 times a day. I have used more band-aids (tm) in the last week than I have used in the last 20 years or more. The good news is that my finger is healing nicely, and should be usable in another day or two. The wound was deep, so it is going to be a while before it has returned to normal. What fun!
This weekend I will make Jalapenos wapped in bacon. I pulled about 100 of them from my garden before the freeze, and I will make a batch of 50 or so and freeze them. I will also make some without bacon for poppers. Here is the recipe:
Cut top of Jalap, hollow out with handle of a spoon to get out the white crap and seeds. Wear gloves. If you think you won't like the heat, blanch Jalaps in boiling water for 45 secs or so. That will take the heat down a few notches, and make sure you get all the inner white fleshy stuff out.
Mix crumbled breakfast sausage, shreaded cheedar, and cream cheese in a bowl. I use about 75% cream, 25 ched or so, and sausage to taste. Sometimes I add mexican spices, but not often, and NOT much. For a better flavor, use Chorizo sausage (you need a specific kind, the kind that fries up nicely, NOT the kind that are links). Stuff the jalaps with the goo. It takes a technique to get them filled, so figure it out. It is best to get all the air out.
PreHeat oven to 475.
Warm bacon in micro wave, but DO NOT crisp it. Wrap 1 slice of bacon around the jalap starting with covering the top, then wrapping to keep the top from leaking.
Cook 12-15 minutes, checking regularly. Cook until bacon is crispy (if that takes 20 mins, then cook 20 mins). It can get smokey, so vent if it does. You can cook at <450 to avoid smoke, but it is harder to crisp up the bacon without doing it so long the goo leaks all out. The goo burns on the bottom, but I like it that way!
